cooking for people who like vegetable based food in their bellies.. rarely reach the home kitchen before 8 PM.. and have most of the ingredients in the cupboard.. or fridge.. or growing in their garden.. (and are also inclined to like loooooong blog titles)..

zesty tomato pesto..

4 medium tomatoes (belly recommends choosing really delicious ones while in season.. roma.. vine ripened.. pretty little yellow ones that are homegrown..)

1 bunch (term used loosely) spinach chopped (or cut with kitchen scissors)

1/2 cup green onions chopped (again.. scissors work wonders)

1/2 cup olive oil

4 cloves minced garlic (opt for a knife with this one in lieu of scissors)

4-5 small handfuls of FRESH chopped basil

in blender or food processor, blend together all ingredients until you've reached "desired" consistency (you'll know it when you see it).. add salt as your tastes dictate.. serve mixed with hot pasta or rice.. put in your mouth.. savor.. make your belly happy..
